The Best Meals I Ever Had in Italy Weren't at a Fancy Restaurant (Part 1: A Morning in Bologna)

When people dream about eating in Italy, they usually picture a candlelit restaurant overlooking the canals of Venice or a Michelin-starred dining room somewhere in Tuscany.

And don't get me wrong—I’ve had some incredible meals at restaurants throughout Italy.

But when I look back on the meals I remember most, they weren't served by a waiter.

They were the ones I helped create.

A Morning in Bologna

One of my favorite memories happened in Bologna, a city that completely stole my heart.

Instead of making reservations at a famous restaurant, we spent the morning wandering through Bologna's historic markets and specialty food shops. Every street seemed to offer another temptation. Wheels of Parmigiano Reggiano stacked like works of art. Freshly cured prosciutto hanging behind glass. Vibrant produce that looked like it had been picked only hours before.

There wasn't a shopping list.

There wasn't a plan.

Just curiosity.

We stopped wherever something caught our eye, talking with shop owners, asking questions, and slowly building the ingredients for dinner. Fresh clams. Beautiful artichokes. Garlic. Olive oil. Herbs. Fresh pasta made that very day.

The experience felt less like grocery shopping and more like stepping into a tradition that has been part of everyday life in Italy for generations.

Back at the apartment, we opened a bottle of local white wine, turned on some music, and started cooking.

The artichokes slowly braised until they became buttery and tender. The clams opened one by one in a fragrant broth of garlic, olive oil, and white wine. Finally, the fresh pasta was tossed together with everything we'd gathered that morning.

It became one of the best plates of Pasta alle Vongole I've ever tasted.

Not because it was the most expensive meal.

Not because it came from a famous restaurant.

Because every bite reminded us where each ingredient came from and the people who had sold it to us just a few hours earlier.

That meal wasn't just dinner.

It was Bologna.

And just a few days later, another table in Florence would teach me an entirely different lesson about Italian food.
