The Best Meals I Ever Had in Italy Weren't at a Fancy Restaurant (Part 2: A Afternoon In Florence)
A few days after wandering Bologna's markets, I found myself standing around another table in Florence.
This time, instead of shopping for ingredients, I was learning how to make them.
We joined a small pasta-making class with about ten people from different parts of the world. At first, everyone was a little reserved, introducing themselves between glasses of wine and handfuls of flour.
Before long, nobody was a stranger anymore.
Hands were covered in flour.
People laughed at misshapen pasta.
Someone accidentally made ravioli that were far too large while another proudly held up perfectly formed cavatelli.
Together we learned to make fresh pasta from scratch and prepared several classic sauces—from fragrant basil pesto to rich marinara—each one proving that Italian cooking doesn't need dozens of ingredients to be unforgettable.
When everything was finished, we all gathered around one long table.
The food was wonderful.
But it wasn't the food that stayed with me.
It was the conversation.
It was raising glasses with people who had been strangers just a few hours earlier.
Sharing stories from home.
Laughing about our imperfect pasta.
Passing bowls around the table as if we'd known each other for years.
For one evening, it didn't feel like ten travelers taking a cooking class.
It felt like a big family dinner.
Somehow, that made every bite taste even better.
When I think back on Florence, that's one of the first memories that comes to mind—not because of what was on the plate, but because of the people sitting around it.
And that's when I realized the best meals in Italy have very little to do with finding the "best restaurant."
